If it came out good you might want to do it again.

It's not a bad idea to make an effort to keep track of what we do right... It's not a bad idea, because that way we can feel confident of successfully repeating the experience.
It follows! We probably can't expect to improve on a successful experience without a basic prosperous premise for a starting point.
I like to keep track of successes with my Smoker/Barbecue... So I can repeat them.
I also keep track of my (not-so successes). So I can repeat them too .... But only if I want to.

Using the following chart outline, or something like it, each time you cook out. It will help to keep track... Of what you did... And what happened.

ALWAYS TRY TO GET STARTED THE SAME WAY!

Get the unit up to the desired temperature .. and keep it that way .. for at least 15 minuets, ..before the food is added. By making sure the smoke stack draft and the firebox draft are set correctly. Remember, the amount of air the fire gets determines how high ... or low. the temperature dial will read.
